A cookie recipe lives or dies on small things: whether the butter is cold, at room temperature, or browned, the ratio of brown sugar to white, and how far the dough spreads in the oven. Most recipes skip over all of that. Every recipe here names the butter state and the sugar ratio, and its proportions are checked against established baker’s percentages, so the texture described matches what the formula is built to produce.

How the desk works

Recipes state when to chill the dough and for how long, because that is usually the difference between a thick cookie and a puddle. When a method calls for rotating the pan or pulling the cookies while the centers still look underdone, the steps say so. When a swap changes the spread, the notes say what to expect. The failure modes worth knowing about are written in, not buried.

The formulas come from culinary science literature, ingredient manufacturer specifications and standard baker’s percentages. The desk does not run a test kitchen, and flavor or texture notes describe what the ingredients are expected to do, not a tasting.

Where the numbers come from

Any baking-science or nutrition claim is checked against established references before it goes up, and the page points you to the source. If something here is wrong and you catch it, write in and it gets corrected in place, with a note on what changed.
