I’m Hazel Bendgrove, and I bake cookies out of a kitchen in Asheville, North Carolina. CookieGrove is where the ones that actually work end up, with the details that make them work written down.

A cookie recipe lives or dies on small things: whether the butter is cold, at room temperature, or browned, the ratio of brown sugar to white, and how far the dough spreads in the oven. Most recipes leave all of that to chance. I bake, taste, and log every cookie here before it publishes, and I name the butter state and the sugar ratio so you get the texture you were promised.

How I test

I tell you when to chill the dough and for how long, because that is usually the difference between a thick cookie and a puddle. When a recipe needs the pan rotated or the cookies pulled while the centers still look underdone, I say so. When a swap changes the spread, I tell you what to expect. The batches that flopped are in the notes.

Where my numbers come from

Any baking-science or nutrition claim is checked against established references before it goes up, and I point you to the source. If something here is wrong and you catch it, email me and I’ll correct it in place with a note on what changed.
