Method
- Whisk together the flour, baking soda, and salt in a small bowl until well combined. Set aside.
- In a large bowl, using an electric mixer, beat the butter until creamy. Add the granulated sugar and brown sugar and beat until light and fluffy for 2-3 minutes. Beat in the eggs one at a time, then add the vanilla extract.
- Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the peanut butter until evenly distributed.
- Chill the dough for at least 30 minutes, or up to 2 hours, to firm it up.
- Preheat oven to 3500F (1750C). Line a baking sheet with parchment paper. Roll dough into 1-inch balls and place 2 inches apart on the prepared baking sheet. Bake for 8-10 minutes, or until edges are lightly golden.
- Immediately upon removing from the oven, gently press a Hershey's Kiss into the center of each warm cookie. Let cool completely on the baking sheet for at least 15 minutes before serving.
Notes
- For the perfect soft texture, do not overbake. The edges should be just set and lightly golden, while the centers still look slightly soft. I've found that 8-9 minutes is often the sweet spot in my oven, but ovens vary.
- If your Hershey's Kisses aren't melting perfectly into the cookies, place them back in the warm oven (turned off) for 1-2 minutes after pressing the kisses, then remove.
- Store leftover blossom cookies in an airtight container at room temperature for up to 5 days, or freeze the baked cookies for up to 3 months.
