  • cup (95g) all-purpose flour
  • 3 tbsp (18g) cocoa powder
  • ½ tsp baking powder
  • 6 oz (170g) bittersweet chocolate (70% cocoa) coarsely chopped
  • cup (75g) salted butter
  • 2 large eggs, at room temperature
  • 1 cup (200g) granulated sugar
  • ½ tsp pure vanilla extract
  • heaped ¼ tsp fine salt
  • flaky sea salt for topping

Method
 

  1. Preheat oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  2. Whisk together flour, cocoa powder, and baking powder in a medium bowl.
  3. Melt bittersweet chocolate and salted butter together in a heatproof bowl, stirring until smooth.
  4. In a large bowl, beat eggs and granulated sugar until lightened, about 1 minute. Stir in vanilla extract and fine salt.
  5. Whisk the warm melted chocolate mixture into the egg mixture until combined. Fold in the dry ingredients until just combined.
  6. Use a cookie scoop to portion dough onto prepared baking sheets, leaving space between cookies.
  7. Bake for 9-11 minutes until edges are set but the center is still gooey. Let cool on the baking sheets for 5 minutes.
  8. Sprinkle with flaky sea salt while warm.
