Ingredients
  

  • 1 cup (226g) butter, (room temperature)
  • ½ cup granulated sugar
  • 1 large egg, (room temperature)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon almond extract
  • 2 ¼ cups all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon strawberry extract
  • pink gel food coloring
  • ¼ cup cocoa, (in replace of flour and no almond extract)

Method
 

  1. Preheat oven to 400°F (200°C).
  2. In the bowl of a stand mixer, combine butter, granulated sugar, egg, vanilla extract, and almond extract. Blend at medium speed until creamy, scraping the bowl often.
  3. Add all-purpose flour and salt to the mixture. Blend at a low speed until well mixed. Divide the dough into desired portions if you plan to tint it.
  4. For colored dough: Add strawberry extract and pink gel food coloring to one portion of dough, mixing until evenly colored. For chocolate dough: replace almond extract with cocoa powder in a separate portion of dough.
  5. Insert a 1M or 2D tip into a pastry bag. Fill the bag with the cookie dough. If the dough is a bit warm from the warmth of your hands, it may be easier to pipe.
  6. Pipe out decorative cookie shapes onto an ungreased cookie sheet.
  7. Bake for 5 to 8 minutes, or until the edges are slightly golden.

Notes

- Dough Temperature: Ensure your butter and egg are at room temperature for a smooth dough. If the dough is too cold, it will be hard to pipe. If too warm, it can lose its shape.
- Food Coloring: Use gel food coloring for vibrant colors without altering the dough consistency. Liquid food coloring can add too much moisture.
- Don't Grease: Spritz cookies need to stick to the baking sheet to hold their shape during piping, so do not grease the pan. If using parchment, ensure it's firmly adhered or use a silicone mat.
- Storage: Store baked spritz cookies in an airtight container at room temperature for up to 1 week, or freeze for up to 3 months. Thaw at room temperature.
