- Line two large baking sheets with parchment paper. Set aside.
- To a large bowl, add peanuts, chow mein noodles, and potato chips.
- In a separate, microwave-safe bowl, melt the butterscotch chips for 60-90 seconds, stirring every 30 seconds. Then, stir in peanut butter until smooth.
- Pour the melted butterscotch and peanut butter into the bowl with the peanuts, chow mein noodles, and chips. Stir gently until all ingredients are fully coated and the chips crush naturally.
- Drop spoonfuls of the mixture onto the prepared baking sheets. Chill for at least 30 minutes, or until set.
Notes
- Use fresh, crispy chow mein noodles and potato chips for the best texture. Stale components will result in a less satisfying crunch. - When melting the butterscotch chips, do so gently in 30-second intervals in the microwave, stirring well after each, to prevent burning. Overheating can make the chips seize. - For shaping, I've found that using two spoons to scoop and drop the mixture onto parchment paper creates the perfect rustic haystack shape. If the mixture starts to firm up too quickly, gently warm it in the microwave for 10-15 seconds to make it more pliable.
