Ingredients
  

  • 2 1/2 cups (320g) all purpose flour
  • 2 tbsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 10 tbsp unsalted butter, room temp
  • 1 cup (200g) granulated sugar
  • 1/4 cup (50ml) vegetable or canola oil
  • 1 large egg + 1 egg yolk
  • 2 tsp vanilla extract
  • 3/4 cup (165g) unsalted butter, room temp

Method
 

  1. Whisk together flour, cornstarch, baking soda, and salt in a medium bowl.
  2. Cream 10 tbsp unsalted butter and granulated sugar until fluffy. Beat in oil, egg, yolk, and vanilla.
  3. Gradually add dry ingredients to wet, mixing on low until just combined. Chill dough for 30 minutes.
  4. Bake rounded tablespoons of dough at 350°F (175°C) for 9-11 minutes until edges are golden. Cool completely.
  5. For frosting, beat 3/4 cup unsalted butter until creamy. Gradually add 3 cups powdered sugar, milk, and 1 tsp vanilla extract until smooth. Spread over cooled cookies and top with Lucky Charms marshmallows.

Notes

- For the perfect chew, do not overmix the dough once the flour is added. Mix until just combined.
- If your dough is too sticky to handle after chilling, add a tablespoon of flour at a time until it's more manageable.
- Ensure your cookies are completely cooled before frosting to prevent the frosting from melting and sliding off.
- To achieve perfectly soft centers, bake until the edges are lightly golden but the centers still look slightly underdone; they will continue to set as they cool.
- Store frosted Lucky Charms cookies in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to 5 days. For longer storage, freeze unfrosted cookie dough balls for up to 2 months and bake from frozen, adding a couple of minutes to the bake time.
