Ingredients
  

  • 1 cup (2 sticks / 227 g) unsalted butter, (room temperature)
  • 1 cup (200 g) light brown sugar, (packed)
  • 1 large egg, (room temperature)
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • ½ cup cake flour
  • 2 ½ teaspoons ground cinnamon
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon kosher salt

Method
 

  1. Preheat oven to 350°F. Line baking sheets with parchment paper.
  2. In a bowl of a stand mixer fitted with the paddle attachment on medium speed, cream butter and brown sugar together until light and fluffy.
  3. Add egg and vanilla extract to the creamed mixture. Mix on low speed until all ingredients are just incorporated.
  4. In a separate bowl, whisk together all-purpose flour, cake flour, cinnamon, baking soda, baking powder, and kosher salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Drop rounded spoonfuls of dough onto the prepared baking sheets, leaving space between cookies.
  7. Bake for 10-12 minutes, or until edges are lightly golden and centers are set. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
